How many different items should be included on a noon time buffet celebrating Kentucky Derby?

I am having a buffet for 8 people to eat during the Ky. Derby race - finger and/or lap food - no utensils for cutting etc. I was thinking about traditional Ky. foods. I am serving mint juleps and Co'colas.
